  • A weekend in Brisbane for Eat Drink Blog 5

    I’m back! Hooray!

    It’s been a month since my last blog post, my longest hiatus ever. For this you can blame a killer flu followed by a nuclear-level virus that kept me bedridden for around three weeks. On the upside I read lots of excellent books about food whilst in bed and will share my favourites with you in a future post.

    My recent birthday was a complete non-event: I spent it in bed, at the doctor’s surgery and getting a chest x-ray to rule out pneumonia. I also had to cancel two blog related trips to the Gold Coast (for the ProBlogger conference) and Melbourne (for a vodka dinner ), which was frustrating. But I’m feeling a lot better now. Besides, these are all #firstworldproblems anyway, right?

    Now here’s a little recap of what I got up to last weekend in Brisbane, Queensland.

    The primary reason for my Brisbane trip was speaking at the 5th Australian Food Bloggers Conference, Eat Drink Blog 5.

    Held at newish, multi-purpose food business venue, Wandering Cooks, the annual, national conference covered a range of topics and activities designed to inspire delegates and stimulate discussion.

    Speakers included Nat from Rubbish Eat Rubbish Grow, who spoke on the Singapore blogging scene, and Australian organic food pioneer Brenda Fawdon, who shared her food philosophy on ethical eating, sustainable food and food wastage – the full program of the day is here.

    One of the most interesting sessions of the day was Melbourne Gastronome’s session on the ACCC guidelines with regards to bloggers, using excellent hypothetical — *cough* — scenarios of blogger disclosure of commercial arrangements, sponsorship and gifted products and services. It’s an area that all bloggers must get their heads around. As a general rule, if you blog be 100% transparent about anything that could be seen to influence what you post on your blog or social media accounts. Check out the official ACCC guidelines here.

    I’ve been to four Eat Drink Blogs now — Sydney, Adelaide, Perth and Brisbane — and it’s always a great way to catch up with old blogging friends and to make new ones.

    I was the last speaker of the day: I did a talk called Blogging for Fun and Profit. Here I am wondering how I’m going to get through 38 slides in 40 minutes.

    I hope that delegates took away some useful ideas from my talk. As I was only able to scratch the surface of an enormous subject in my allotted time I am currently writing an e-book about creating opportunities from blogging that will go into much more detail.     While not at Eat Drink Blog events my friend Erin and I had a great time getting to know Brisbane. We wandered around the CBD, Southbank, Paddington and Fortitude Valley, shopping and sampling some great food and wine. These are some of my favourite pics from the weekend and I’ve also included a mini address book below.

    Travelling with Erin was awesome. She booked our accomodation, researched flights, what to do and where to eat, and had a photographic memory of maps – all I had to do was tag along!

    We were lucky to catch the final days of Harvest, a celebration of food in art at GOMA, the Queensland Art Gallery/Gallery of Modern Art (or QAGOMA in full.) I came away so inspired.

    After the exhibition we were peckish. We had a look at the award-winning GOMA restaurant but decided to eat outside at the GOMA Cafe Bistro so we could enjoy the lovely Brisbane sunshine.

    I had the juniper cured duck salad with radiccio, snowpeas, caramelised onion and pomegranate ($18) served with shoestring fries and aioli ($8). Both were simple and straightforward dishes but nicely executed.

    Shouk Cafe was recommended by a number of local food bloggers and I can see why: this place does great modern Middle Eastern inspired food, the fit out is simple but stylish and the service is excellent.

    To avoid a queue on the weekend, we were advised to arrive before 8:30am. 8:30am! That was never going to happen so we arrived late, left our mobile number and happily checked out the nearby design, gardening, books and fashion shops while we waited twenty minutes or so for our table. Food + shopping is always a good start to the day, right?

    Whilst walking around Fortitude Valley, we stumbled across the very appealing Winn Lane, home to some great shops — including Künstler, the cutest magazine shop — and a popular burger outlet.

    We arrived at Gerard’s Bistro for a late lunch in that quiet mid-afternoon period just before the kitchen was about to switch to a bar menu before the evening dinner service.

    I really like the fit-out at Gerard’s – it’s been put together so well. You can see everybody and everything and it’s comfortably luxurious while hitting that sweet spot between modern and timeless style.

    The food at Gerard’s — inspired by Middle Eastern, Southern European and Northern African cuisine — was elegant and subtle, revealing the quiet confidence of a chef who knows what he’s doing in the kitchen.

    Dishes are designed to be shared: we tried the heirloom tomatoes, zucchini flower, buttermilk, walnuts and date molasses ($16), the smoked new potatoes, tahini yoghurt, sumac and pork floss ($14), the fried cauliflower, tahini, ras el hanout, smoked almonds and pomegranate ($14) and the free range duck breast, caramelised pumpkin, quince, sour golden raisin and oat ($32).

    Not one dish was fussy or overly-complicated: even the most complex dish in terms of components, flavours and textures — the pistachio financier, halva, and textured rooftop honey ($16) that we shared for dessert — was a harmonious and well balanced pleasure.

    All in all, it was a lovely meal to finish a great weekend away. Brisbane: I will be back.

  • Bloggers and brands: why we’re (mostly) doing it wrong

    The session that sparked the liveliest discussion at the 4th Australian Food Bloggers Conference (Eat Drink Blog 4) last weekend in Perth was a panel on ethics and working with PRs. It seems that there’s nothing more divisive in the blogging world than a discussion about bloggers and money and commercial vs non-commercial blogging.

    On one side, we had Cyn aka The Food Pornographer (disclosure: Cyn is a close friend and member of the Servved advertising network I am part of), who selectively works with food and travel companies on her blog. On the other, there was Phil from The Last Appetite, who does not accept any form of sponsorship or advertising on his blog.

    In a nutshell, Cyn’s take on it was that if you can work with brands and maintain your integrity if you are extremely selective, completely transparent and maintain 100% editorial control.

    On the other hand, Phil felt strongly that any form of sponsorship or gifted products, services or experiences is potentially a corrupting influence. He was also concerned that a gifted product or trip is not a ‘true’ experience or one that bloggers would actually pay for. Part of Phil’s hardline approach is due to a conflict of interest between his blog and his day job working for a state tourism company.

    Before I share my response, please note that I currently freelance for food, media and tourism companies (brands). Previously I worked in general management, marketing, fundraising and PR. I’ve been paid to write for 15+ years and I’ve been blogging for 2.5 years.

    Let’s start with some definitions, shall we? These are mine; they may be different to yours.

    Definitions

    1. Gifted – this is when a brand supplies a blogger with a free product, experience, meal or service so they can experience it and perhaps review it. Or perhaps the brand provides a product for a giveaway or invites the blogger to a dinner, launch or event. There is no contract between them.
    2. Famil – this is when a brand supplies a blogger/journalist with a free travel experience so that they can familiarise themselves with the destination and hopefully blog/write about it. Typically this includes flights, transfers, accomodation, meals and entertainment. There is no contract between them. 
    3. Sponsored – this is when a brand pays a blogger to blog, tweet or share information about the brand. There is a contract between them. The content is delivered through the blogger’s own blog and social media channels. 
    4. Commission – this is when a brand pays a blogger to develop content about the brand. There is a contract between them. The content is delivered through the brand’s own website, marketing material and social media channels. 
    5. Advertising – when a brand pays for ad space on a blog. Typically in the form of banners, squares/tiles or leader boards, ads are a paid promotion of a brand and covered by a contract.

    I’ve worked with brands in all of the above ways. 

    Why do some bloggers choose to be commercial vs non-commercial?

    Bloggers who choose not to engage with brands usually do so because of one or more of the following reasons:

    1. Blogger has a full-time job that pays the bills and is unrelated to their blog. Blogging is a hobby and he/she wants to keep it fun.
    2. Blogger is a writer/photographer/stylist and wants to keep their blog somewhere to ‘play.’
    3. Blogger wants to be able to blog about anything and does not want to feel restricted in any way.
    4. Blogger believes it’s impossible to work with brands without ‘selling out.’
    5. Blogger believes doing things on his/her own dime is a more genuine experience.
    6. It would conflict with blogger’s day job in the food, tourism or PR industries.

    In October 2012 I spoke at the Adelaide Beauty Bloggers Conference on a panel called ‘Blogging for Fun and Profit.’ I can’t speak for all commercial bloggers but the video sums up why I’ve gone down the path I have pretty well.

    Common criticisms of bloggers who work with brands

    Phil touched on some of these during the Eat Drink Blog 4 session. Other bloggers will no doubt have different views but my personal response is as follows.

    #1: Bloggers have no integrity; they’ll blog anything for a freebie.

    No. I turn down 95% of invitations and offers. I am extremely selective about the brands I do work with. Integrity and professionalism have nothing to do with a job title — in this case, ‘blogger’ — and everything to do with a person’s character.

    #2: Bloggers don’t do their own research; they take the press release as fact and don’t bother looking beyond it

    Before I agree to work with a brand I Google the company and spend some time reading through anything that might tell me more about the company and/or product or destination. Because, as with any job, I’m interviewing them as much as they are interviewing me. And I only want to work with people and companies that are a good fit with me and who will do the right thing by me.

    #3: Bloggers promote or blog products or experience that they would never pay their own money for

    No. I only blog things I would recommend to my family and friends. With regards to famils and sponsored travel, I think Cyn said it best during the Eat Drink Blog 4 panel discussion when she said she has a bucket list of hundreds of places she’d like to visit but the reality is she’s unlikely to be able to visit them all on her own coin. So if the right opportunity to visit a place on her list came up she would consider it. I would, too, because a trip could be a great fit for my food & travel blog. On the flip-side, I’ve turned down countless free meals because I only write about restaurants in the context of a story or a travel experience. So I won’t accept free meals I know I would never blog. For me (and Cyn) it’s all about it being a good fit.

    #4: Even if the blogger is not being paid, there is an implied reciprocity in any gifted product or service i.e. you scratch my back, I’ll scratch yours.

    Yes and no. If a company supplies me with a gifted product or experience they are enabling me to experience it but they are not paying for my time or my expenses. There is no contract between us so I don’t feel obliged to them and won’t be pressured by them. Having said that, I rarely accept gifted products, invitations or services nowadays because I find it easier to manage expectations this way.

    #5: Bloggers blog or tweet about products and places and you never know if they’re being paid to do so or not.

    I disclose any commercial or personal relationships that may influence something I’ve posted on my blog. I usually work a statement explaining the relationship into the beginning of a blog post and end with an explicit disclaimer outlining any freebies or compensation. At the conference one speaker mentioned that he’s seen some bloggers tagging certain Tweets or Instagram posts with hashtags like #gifted, #sponsored, #clientwork, and #mywork. I think this is an excellent idea and will do so with all relevant posts on these channels from now on.

    Now let’s look at some examples of bloggers and brands working together successfully and unsuccessfully. I’ll start with the unsuccessful ones.

    Brand & blogger fails

    The ‘Machine Gun’ Approach

    The brand/PR agency/blogger agency sends out a media release, invitation or giveaway offer to every blogger they can find an email address for. The email is not personally addressed and the sender has not bothered to determine whether the release is in fact a good fit for the blogger.

    I call this the Machine Gun approach because the brand/PR agency/blogger agency is basically scattering a group of bloggers with their release and hoping some of it hits their target.

    In my opinion, this is a lousy way to do business. Unlike journalists, bloggers are not always on the lookout for a new story. So you might get some bloggers picking up your story — especially if you offer free product — but more experienced bloggers  won’t touch these types of ‘opportunities’. Why would they want to blog the same story as everybody else? It’s not interesting, it doesn’t make good content and readers get put off.

    The ‘But We Love You!’ Approach

    The brand/PR agency approaches an individual blogger or group of bloggers with a pitch that goes something like this: “We love you, we love your blog, and we think you’re awesome. We want to develop a great relationship with you so we have this UH-MAZING opportunity for you where you promote our brand for us. We want you to blog a recipe using X product or write a story about X on your blog that we can also publish on our brand website. Unfortunately we have no money to actually pay you but we will link back to you and fully credit you.”

    As a full-time freelancer, pitches like this make me cross because the agency is essentially commissioning a story/blog post and leveraging the blogger’s skills and influence but saying they have no budget for it. I never do these stories because I won’t work for free for profit-making companies. Check out Catherine Deveny’s post on why she won’t work for free.

    I know we all have to start out somewhere and I’m not saying you should never work or write for free. In the mid 90s I spent my university holidays volunteering at a local arts festival and my free time volunteering for a local singing group and both gigs led to to my first job in marketing & PR.  I also wrote for the Adelaide University newspaper for two years as a volunteer contributor before becoming the paid co-editor in ’96. So I do get it.

    But if you’re a blogger be strategic and selective about the companies you do work with. Ask yourself how much your time, skills and influence are worth and don’t be scared to say no to ‘opportunities’ that aren’t a good fit. As time goes on and your skills and experience grow, saying no to the little opportunities may help you land the big ones.

    How brands & bloggers can work together

    In my biased opinion — and we are all biased in some way — sponsoring, commissioning and advertising with bloggers (3, 4 and 5 on the list above) are by far the most effective way bloggers and brands can work together.

    Unlike gifted products, event invitations or famils, the expectations and deliverables on both sides can be clearly communicated and explicitly stated in a written contract. This way, brands don’t feel let-down and bloggers don’t feel pressured to post.

    Commissions

    commission is very straightforward and effective way for brands to work with a blogger. A brand like what the blogger does (recipes, writing, photography, styling, blogging, social media etc) and hires him or her to do it for them. This content is then promoted via the brand’s usual marketing channels. The brand gets the custom content they were after as well as the positive association of working with the blogger, regardless of whether the blogger blogs about the project or not.

    Sponsored Content

    Sponsored content is a little trickier. Because it’s going out on the blogger’s blog and social media channels the effectiveness of sponsored content depends entirely on whether or not it’s a good fit and the authenticity of the message.

    I read blogs because I love the little window they give me into another person’s world. I read blogs to be inspired, to learn something new, to be entertained and to be moved: I don’t read blogs for a re-worded media release (and I’ve written plenty of those in a former life).

    Brands are used to telling their story in their own words. When they engage with bloggers they are passing the conch to the blogger so that the blogger can tell the brand’s story in his or her own words. That can be scary for a brand but smart brands understand that they do not fully control their image anymore. True authenticity requires the sharing of warts and all and consumers are more likely to trust brands that are comfortable with this approach.

    Personally, I believe sponsored content works and is credible when it’s written in the blogger’s own voice without any external interference from the brand. That means no approval by the brand before publication or any editing done after publication because the brand is unhappy with the way their brand or product is portrayed.

    The blogger also needs to be comfortable with what they they’ve agreed to do: if they’re not, a certain self-consciousness or over-perkiness can creep into their posts, making them less genuine.

    Advertising

    Blogs are free to read but can be costly to maintain. Apart from the thousands of (mostly unpaid) hours I’ve devoted to this blog I have a whole book of receipts related to blog expenses like hosting, camera equipment and accessories, external hard drives, card readers, props (painted wood, table linens, flat ware, crockery etc), kitchen ware, food costs and so on.

    Some bloggers like to offset their blog expenses by running advertisements on their blogs. Some, like me, join an ad network, while others sell ad space directly to brands themselves via their blogs.

    For brands, the ability to tap into a blogger’s influence and audience through advertising can be very attractive. Advertising is a good choice for brands who want to align with bloggers while retaining more control of how they are presented.

    6 tips for brands who want to work with bloggers

    1. Don’t just send a suggested story idea to every blogger in your database and say ‘please consider using.’ This is lazy and ineffective and it completely devalues the brand in my eyes.
    2. Do your research. Only approach bloggers that have blogged similar stories to the one you are going to pitch them and reference these posts in your customised approach.
    3. If you are sending out event information or invitations, make sure the bloggers you approach live in the same state and might actually be able to attend your event (or send them a plane ticket).
    4. Ask yourself, what’s in it for the blogger? Why would he/she care about my brand?
    5. If you’re sponsoring or hosting a blogger event, think about ways to really make your brand experience special and immersive. The extraordinary always gets talked about.
    6. If you’re promoting a product remember that bloggers love experiencing things for themselves. So don’t just send them a media release and say you can supply high-res images. Offer them a trial or sample so they can try it for themselves.

    6 tips for bloggers who want to work with brands

    1. Treat your blog as a portfolio. Create blog posts that showcase the breadth of your skills.
    2. Create an About page with a photo that helps to establish your credibility and authority. Don’t write about the time you woke up half-naked out in the middle of nowhere and definitely don’t display a photo of said event. Instead, talk about the work and life experiences that you’re most proud of. Better yet, create a separate portfolio site and list your services, clients and testimonials. Here’s mine as an example.
    3. Make sure you make it easy for people to get in touch with you. I’m amazed at the number of blogs that still don’t include an email address or contact form.
    4. Don’t respond to unpaid pitches with: “Are you out of your freaking mind?” Instead, try: “Thanks for your email and for thinking of me. Unfortunately I don’t work for free so this particular project is not a good fit for me. However, if you  have a project with a budget I do hope you’ll consider me.” This way you make your position clear but still leave the door open. 
    5. Know your worth. Work out how long it takes you to write a post, develop, cook and style a dish (if you do recipes), and shoot and edit photos. Work out your hourly rate and how much your time and skills are worth. Research going rates in the industry and chat to fellow bloggers. Don’t be afraid to negotiate an offer or to go back to them with suggestions of other ways to work together. And put everything in writing – I have lengthy Terms & Conditions that I send out with every requested quotation. Protect your own interests just as the brand is protecting theirs.
    6. Maintain 100% editorial control of your blog. Never give this up.

    Let’s do it better

    If you’re a blogger and you want to work with brands, make it easy for brands to find you and assess whether you’d be a good person to work with. Be strategic about everything you post, remembering that you never know who is out there reading your blog; while most of my work happens off my blog nearly all of my current clients have found me via my blog. 

    In terms of accepting freebies or payment, ultimately only you can decide what you feel comfortable with; I’m blogging to continue the conversation, not to lay down the law.

    For brands, please do your homework before you approach bloggers. Right now I’m deleting 95% of your pitches because they are simply a poor fit.

    I believe that it is entirely possible for brands and bloggers to work together in a way that is effective, mutually beneficial, respectful and collaborative. Unfortunately, this is far from the norm.

    Let’s do it better.

  • Meet a Food Lover: Erin from She Cooks She Gardens

    For this week’s Meet A Food Lover post, I’m happy to be interviewing my chum Erin from Adelaide blog, She Cooks She Gardens.

    I got to know Erin well last year when we were both on the organising committee of Eat Drink Blog 3 (the 3rd Australian Food Bloggers Conference). In real life, she’s just like she is on her blog – smart, funny, dedicated and passionate. On She Cooks She Gardens, Erin blog about two of her loves: cooking and gardening. As I’ve recently been reconnecting with my own garden, I thought it was a great time to have a chat with Erin about growing your own food at home.

    How did you get into gardening Erin? What inspired your interest?

    I think I’ve always been interested in gardens and plants. My grandmother was a keen gardener and always had the most beautiful cottage garden. It was a labour of love for her and over the years I was exposed to her love and knowledge of plants and how to care for them. We also had a number of super productive fruit trees in the garden at my parents place; oranges, lemons, apricots, nectarines and figs, to name a few. I especially loved apricot season and at a young age I understood that there were few finer things in life than eating fruit picked fresh from the tree.

    I’d love to grow edible plants that can cope with a little bit of neglect during my busy periods. Can you suggest some low-maintenance plants for me?

    Herbs like parsley, thyme and oregano will grow like crazy at this time of year and will do so without much intervention. Chilli bushes, once established, will grow for years without much more than the occasional feed. Another really easy option is silverbeet, which will grow happily in a pot so long as it is planted in good soil.

    I think the most important aspect of gardening is soil prep – the time and effort you put in initially will reward you later on. I work some pretty crazy hours these days and my garden chugs along without much intervention because I’ve set a good foundation.

    Say I’m keen to grow my own food but I don’t have a lot of space in my garden, or I live in a flat. What can I grow in pots?

    You can grow pretty much anything in pots, even small fruit trees; it all depends on your budget, how much sunlight your plants get each day (ideally you want about between 4-6 hours) and your patience. I would recommend growing things that you use a lot of which don’t tend to last very long in the fridge, things like baby spinach and bok choi are two in particular that spring to mind, as are herbs like parsley, coriander (though this can be a fussy plant to grow) and mint.

    A Meyer lemon tree is a lovely addition to a courtyard or balcony as is a bay laurel (bay leaves) and will reward you for years to come.

    If you’re growing in pots then it’s important to remember that your soil won’t last as long as would if you’re growing in the ground because of water run-off. You will need to top up and change your soil regularly, and probably feed a little more than you would in an in-ground garden bed. This shouldn’t deter you – it’s just something to bear in mind.

    Of the herbs you grow yourself at home, which ones do you use the most? Can you suggest some good recipes using these herbs?

    Herbs are awesome additions to any garden as they taste great and are pretty easy to maintain. They also act as insect repellents keeping nasties like aphids and caterpillars at bay and, when left to flower, attract good bugs to the garden which is really important if you want to reduce the amount of chemicals you’re using.

    During the summer months I love basil and put in as many plants as I can find room for. It’s a great herb to grow and comes in a variety of flavours including the standard Genovese or ‘sweet’ basil you find in traditional pesto, lemon and lime variants, Thai basil (great for Pho!) and the more unusual (but lovely) cinnamon basil which is great in summery fruit salads. Basil pairs beautifully with tomatoes and you’ll often find people grow these two together as basil is said to improve the flavour of tomatoes and also helps to keep whitefly at bay. Despite its savoury profile, basil goes really well with raspberries and I thoroughly recommend adding a little basil to raspberry ice cream.

    I also really like growing chives which will grow year round but are at their best in the cooler, wetter months. They are a member of the Allium family (the same family as onions) and so are quite useful in the garden as many bugs don’t like the way they smell. Chives make a wonderful addition to pretty much anything including salad dressings, soups, scones and marinades. One way I like to make use of a glut of chives is in herb butter. Soften a stick of butter and add a ½ cup (or so) of chopped chives and churn it together. Re-wrap and store as you would regular butter and add it to boiled potatoes and roast veg, spread it on bread with a little garlic and dab onto fish and chicken.

    Dill is another brilliant herb which I always make sure I’ve got in my garden. It is a great plant to have because it tastes wonderful and also repels cabbage moth (which are responsible for those pesky green grubs that eat everything in your garden). When left to flower, Dill will attract beneficial insects to your garden (which in turn will eat aphids and other unwanted visitors). My favourite way to use dill is in a pesto with pistachios and a squeeze of lemon.

    I’m thinking about installing some portable garden beds into my back yard to grow vegetables. What would you suggest I do in terms of soil preparation and compost?

    As I’ve mentioned already, soil preparation is really important and will make a huge difference to the success of your garden. One of the biggest mistakes gardeners make is thinking they can skip out on soil prep, but I actually see it as being more important than plant selection. There are a couple of ways to approach it.

    The first is to buy pre-prepared soil and top up with cow manure and compost at the change of season and the second is to build your own soil using the soil lasagne method championed by people like Stephanie Alexander.

    There are pros and cons to each approach. Buying pre-made soil  is costly if you buy it by the bag and won’t last much longer than a season. The upshot is that all the hard work has been done for you and so is a good starting point if you’re short on time or are growing in pots. If you’re going to invest in some beds then I’d suggest finding a landscape supply yard and buying your soil in bulk. You will save yourself a small fortune doing it this way – for example, three bags of premium vegie potting mix will cost between $10-15 a bag and you’ll need about three bags to fill a small bed, add in the cost of plants, fertiliser and mulch and it becomes a very costly enterprise. Compare this to about $8 for enough soil to fill a large bed (and some leftover for pots) and you’ve got plenty left over for other, more exciting things like plants.

    The other method is to build a ‘soil lasagne’ which is explained in detail over at my blog and involves building layers of mulch, compost and cow manure to create an excellent growing medium in which your plants will thrive. This method is a bit more complex but, I believe, has much better results than buying pre-made. It’s a bit like comparing a cake made from scratch and one made from a packet mix, I suppose.

    I want to teach my kids about growing their own food. What plants would you suggest for them?

    I think it’s really important that kids get to know where their food comes from and one of the best ways for them to learn this is through growing their own produce. It encourages them to take an interest in their food and I’ve heard that it can also help encourage kids to try foods they might not have been inclined to eat before.

    Strawberries are a great option for kids as the end result is a deliciously sweet reward. I remember growing strawberries as a kid and being really stoked when my first lot ripened. Now is the time to plant strawberries and I’d recommend buying seedling from a nursery rather than planting seeds.

    Another great option for kids are peas and snow peas. They are fast-growing, relatively resistant to bugs and can be eaten straight from the plant. They do well in pots (though you will need a trellis for them climb up) and pretty much the entire plant is edible including the flowers and the leaves.

    Finally, I would suggest a pot of chocolate mint which, as the name suggests, smells (and tastes!) just like an after dinner mint. If nothing else your kids will love picking and smelling the leaves of this easy-to-grow plant which will encourage further growth. Be sure to keep this in a pot though as mint has a bad habit of taking over gardens if left to roam.

  • Meet A Food Lover: Dianne Jacob, food writing coach + author

    One thing I love about being a food blogger, writer  and recipe developer is that every eating experience can be considered ‘research.’ In the name of ‘research’ I’ve eaten six meals a day and spent countless hours (and money) in produce markets, restaurants and cafes like The Acland Cake Shop in St Kilda, Victoria — see above — which we visited last week.

    But probably the thing I love most about being a food blogger is that this blog brings me into contact with all sorts of amazing and inspiring people who are passionate about food.

    Last year I met Dianne Jacob, noted American food writing coach, when she visited Australia to deliver the keynote speech at Eat Drink Blog 3, the 3rd Australian Food Bloggers Conference. Dianne has had a long and distinguished career as a food writer, editor, author and coach and her book, Will Write for Food, is considered by many food bloggers as essential reading.

    Not all writers are good conversationalists but in person Dianne was warm and gracious and a wonderful storyteller. We had a group dinner and then a lunch together and I enjoyed hearing about Dianne’s life and her adventures in the food writing world.

    I’m always looking to improve the way I write about food so I was thrilled when Dianne agreed to be interviewed for this blog.

    Q&A with Dianne Jacob

    Christina: What are three simple things anyone can do to improve their food writing?

    Dianne: Use fewer adjectivesconnect the food to a story, and incorporate action verbs.

    C: What is editing and how important is it?

    D: Editing comes into play once you get your thoughts down in a draft. Your piece needs to be organized in a logical way, with all extraneous material deleted. Cutting is paramount. It’s how you focus your piece tightly, where it comes together as a whole and every paragraph works towards the whole. You also want to  make sure the beginning grabs people, and the ending sums up the piece in some way and doesn’t just trail off. Then you tighten each sentence by making every word count. Editing is the most time consuming part of writing.

    C: What do great food writers have in common?

    D: The ability to evoke emotions by creating scenes based on the senses. The best writers know how to make writers feel like they were there, actively engaged in the scene, rather than just sitting by passively. Readers can smell, taste and see the food, and the story around it evokes memories or responses.

  • Where to next for Eat Drink Blog?

    Regular readers will know that I was one of the organisers of Eat Drink Blog 3 (EDB3), the third Australian Food Bloggers Conference which happened in November in Adelaide, South Australia.

    Eat Drink Blog began in Melbourne in 2010, when a group of food bloggers decided it was time to hold a national, community-focused, food blogging conference to bring Australian food bloggers together. You can check out the minutes of the first meeting and the programme if you like.

    Eat Drink Blog 2 took place in Sydney in November 2011 and I was lucky enough to attend. It was a fantastic day full of learning, inspiration and networking – you can see details of the Eat Drink Blog 2 organising committee and the final programme here.

    I was so grateful to be part of Eat Drink Blog 2 I made a point of thanking each of the organisers personally on the day. I told them that I had an events background and could see just how much work had gone into the conference, and that if they needed a hand with Eat Drink Blog 3, to give me a call.

    Little did I imagine that six months later they would do just that.

    Now I’m sure all the other EDB3 committee members would agree that EDB3 turned out much bigger than we originally anticipated, and there were many unexpected twists and turns along the way. However, the two day conference was a resounding success on a number of levels and I’m glad to have been part of it.

    The 2013 committee are now looking ahead to 2013 and we have recently advised that expressions of interest are open for a new (volunteer) team to take on the organisation of EDB4.

    So while we’re in this transition mode, I wanted to take this opportunity to discuss the concept and legacy of Eat Drink Blog, what I believe needs to be retained and where it may go from here. I’d love to hear what you think, too, and welcome respectful debate in the comments below.

    To start with, Eat Drink Blog was conceived as a community event. It belongs to all Australian food bloggers and is managed by a team from within that community.

    My personal opinion is that the organisers of Eat Drink Blog have no more ownership over the concept or event than any other Australian food blogger. People that take on the organising job must understand that Eat Drink Blog has to be representative of the Australian food blogging community. Yes, organising EDB is a leadership role but it’s a care-taking role, not a star-making one. The community’s interests have to come first.

    As one of EBD3’s caretakers, I do feel, and I’m sure many of the other current and past committee members feel, quite protective of Eat Drink Blog. I want its legacy to continue in a way that is representative and inclusive of as many Australian food bloggers as possible. But my time on its organising committee is ending, and after we handover to the new committee, I and the rest of the EDB3 committee will step back and let them get on with the job of organising Eat Drink Blog 4.

    So with this in mind, here are my thoughts and suggestions for your consideration.

    1) Country-wide hosting and representation

    As the national food blogging conference I believe that each state of Australia should have the opportunity to host Eat Drink Blog. Similarly, each year there should be good mix of delegates from each of the states, roughly in line with the relative populations of each state. I also think that bloggers from rural areas should be given preference.

    2) Format

    Each Eat Drink Blog has been slightly different in terms of format. Eat Drink Blog 1 was  a one-day conference of workshops and talks with drinks afterwards at a bar. Eat Drink Blog 2 was a one-day conference of talks, workshops, masterclasses, demonstrations and dinner. Eat Drink Blog 3 was a two-day event comprising a market tour, tours to different wine regions, a dinner on the first day and then a conference of talks and workshops next day.

    There is no requirement to duplicate or expand on the previous year’s conference. The Eat Drink Blog 4 committee may choose to revert back to a one-day format, re-introduce cooking masterclasses and demonstrations, remove sections and/or introduce new components.

    3) Cost

    Most food bloggers make little or no money from blogging and many don’t wish to; their blog is truly a labour of love. So to encourage the largest possible participation rate I think the cost of attending EDB should be kept as low as possible.

    4) Sponsorship and grants

    Sponsorship is a contentious subject amongst the food blogging community; some bloggers like engaging with brands, companies and organisations while others don’t.

    In the past, Eat Drink Blog has been free for delegates to attend (delegates have paid for their own flights, accommodation and expenses) because of sponsorship secured by the organising committee to cover numerous expenses including refreshments, the venue, printing & signage, AV and sound, documentation and so on. Sponsorship has also been secured to provide gifts for (Australian) presenters who are not paid and do not receive any compensation for travel expenses.

    I used to work full-time in fundraising for large not-for-profits so I believe that sponsorship can be a win/win situation. When sponsorship works well, it’s because both parties are respectful of the value that the other party is bringing to the table, mindful of the boundaries and clear about each other’s expectations and responsibilities.

    I know some bloggers disagree with the whole notion of sponsorship and that’s fine. The reality is that Eat Drink Blog is a very attractive event for sponsors. If future committees wish to pursue the sponsorship path, they will never be short of takers. However, it will be the committee’s responsibility to ensure that a balance is maintained between sponsors’ wishes and the philosophy and integrity of Eat Drink Blog.

    If future committees decide they do not want to have any sponsors they will have to find alternative sources of income (e.g. attendance fees) to cover conference expenses.

    5) Number of delegates and future capacity 

    I personally believe that any Australian food bloggers who wishes to attend Eat Drink Blog should be able to. However, each year the number of attendees has naturally been restricted by the venue.

    In 2012 we found ourself in the unprecendented position of being over-subscribed by 55% for 80 positions. While on one hand this was a clear demonstration of the need and popularity of the event, this meant that a lot of food bloggers missed out.

    To those that did miss out, let me say this: we hated having to pick and choose amongst our peers and we agonised over filling those 80 delegates spots (maximum capacity). Eat Drink Blog is all about inclusion so we really disliked having to turn away bloggers who wanted to be part of it. However, we had to find a way to manage the oversubscription and so we did the best we could to make the process fair and transparent.

    For future committees, you should be prepared to face a similar situation. Unless, of course, you can secure a 200-seat venue.

    One thing that we did not do, but which might be possible in the future, is to get permission from each of the presenters to bundle all their slides and papers into one large document that was then freely available for any Australian food blogger to download.

    Alternatively, perhaps some live streaming of selected sessions could be achieved or non-attending delegates could participate by asking presenters questions in real-time via Twitter a.k.a. Qanda.

    I certainly think that in the future there will be opportunities to expand the scope and reach of Eat Drink Blog far beyond the physical venue.

    6) EDB spin-off group

    One thing I loved about EDB2 is how much it inspired me, how I met so many different bloggers and how it meant I instantly had a circle of blogging friends throughout Australia. (Ironically, this year I was either too busy, preoccupied or tired to enjoy much interaction with most of the delegates. *Sad face.*)

    I’m not the only one who felt so inspired after EDB either.  After each EDB there has been discussion about setting up some kind of an Eat Drink Blog spin-off group or association to help food bloggers stay in touch with each other and share useful information in the periods between the conferences.

    A few years ago the Australian Food Bloggers Group on Google was a good way to share information but nowadays that group is largely inactive. So over the years, alternative possible models have been discussed. However, for various reasons — legal, financial, philosophical, administrative and ethical — the idea of an Eat Drink Blog spin-off group or association has never gotten off the ground, and I appreciate the reasons why.

    Bloggers are a diverse bunch with a variety of different styles, motivations, ethical standpoints and philosophies. This is a good thing, no, a great thing. The beauty of blogging is that you don’t have to blog by anyone else’s rules – you are King or Queen of your own domain. So coming up with a model that would please everyone is quite possibly unachievable. (By the way, I am aware of a number of other groups for Australian food bloggers but none of these are associated with or reflect the philosophy of Eat Drink Blog.)

    (Edit: I should say, “fully reflect the philosophy of Eat Drink Blog”. Many groups have a similar community philosophy and feel but each group is different in some small but significant way).

    In any case, the EDB3 committee discussed the idea of a spin-off group in EDB3 committee meetings earlier this year and the idea of a closed Facebook group was proposed. However, we didn’t take this any further because we decided it could wait until after the conference and we agreed that the Australian food blogging community had to be consulted. If the group was for the Australian food blogging community and would be in some ways representative of it, the group had to be owned by the community and established with its goodwill.

    The model we discussed was open access — if you were an Australian food blogger you could join — and democratic — anyone would be able to post messages to the wider group. The only moderation done would be to ensure that the person seeking to join was actually an Australian food blogger and not someone seeking to use the group to promote commercial interests.

    For various reasons, including other work commitments, the EDB3 committee will now not be undertaking this consultation. However, the path is clear for any future EDB committees and the wider Australian food blogging community to continue discussing whether the community needs or desires such a group or association.

    To end this post, I’d like to thank a few people:

    • To former EBD committee members: it’s been an honour to work on EDB3 this year and to continue your legacy. I know we did some things a bit differently but on balance, I hope that there were more positives than negatives.
    • To my fellow EDB3 committee members: it’s been a massive journey, hasn’t it? Thank you for all your contributions and for showing me what teamwork, community and friendship are all about.
    • To future EDB committee members: steering EDB is going to be a lot of fun, a huge amount of work and an incredible ride. As food blogging in Australia continues to evolve the conference should change, too. Listen to your community but don’t be afraid to put your own stamp on EDB either, to reflect the heart and soul of your city. I wish you all the best with it.

    I’m feeling extra enthusiastic at the moment because I’m so glad to be on the mend after 3+ weeks of flu/cold. Speaking of feeling the love, here are eight things I want to share with you this month.

    I’m so excited about Eat Drink Blog 3  – the Australian Food Bloggers Conference, that I and a committee of local food bloggers are organising for November 3-4 in Adelaide, South Australia. We have such an incredible line up of speakers this year – they are some of the most inspirational, talented and passionate food lovers around and I have to keep pinching myself to confirm that they’ve all agreed to be part of Eat Drink Blog 3.     Bake the world a better place

    On Monday 27th August the Red Cross are holding the Big Bake Cake, a charity event to raise funds for those in need. My favourite perfume — Diptyque’s L’Ombre dans l’Eau — is obviously a must but I’m going to indulge my inner show girl and break out the false eyelashes, too. *flutter flutter*

  • Tell us what you want at Eat Drink Blog 3

    As mentioned in my last post, I am one of the organisers of Eat Drink Blog 3, the Australian Food & Drink Bloggers Conference, which will take place in Adelaide later this year.

    I attended Eat Drink Blog 2 last year in Sydney and had a fantastic time. I remember walking into the conference room full of bloggers packing SLRs, smartphones and Ipads and thinking, ‘yes! I’ve found my people.’

    OK, I can be a little dramatic at times. But the relief of finding a group of people who ‘got’ me was immense.

    I didn’t have to explain to this group why I love shopping at markets, why I had a cupboard full of food props, why I often ate my food cold because I was photographing it or why I spent hours cooking, writing, editing, posting, tweeting and instagramming about food.

    They got it. They understood. They were driven by the same passion, creativity and curiosity.

  • Kingsley’s Steak and Crabhouse, Wooloomooloo, Sydney

    As the final official event of Eat Drink Blog 11, the second Australian Food Bloggers Conference, we have dinner at Kingley’s Steak and Crabhouse at Wooloomooloo. Deciding not to go to my hotel between the conference and the dinner, I catch a taxi to the restaurant with Jan from Dinner in Ten Minutes, Jo from My Delicious Blog and Ashley from I’m so Hungreee.

    We have about 45 minutes to kill before dinner so we order drinks. It is a perfect evening for a Mojito.

  • Eat Drink Blog 11, the Australian Food Bloggers’ Conference, Sydney

    Last Thursday, I was thrilled to receive an email asking me if I was interested in a last-minute spot at Eat Drink Blog 11, to be held that Saturday in Sydney. I immediately responded ‘yes’ and did a happy dance to the tune of Bobby Brown’s ‘Can’t Touch This’.

    What was I so excited? Well Eat Drink Blog 11 was only the second Australian Food Bloggers Conference, following up from the inaugural conference in Melbourne last year. It’s an invite-only conference and only 80+ spots were offered Australia-wide, so I was extremely grateful to be invited, especially as The Hungry Australian is so new. (As it turns out, I was only one of two bloggers from Adelaide to attend, the other being Amanda from Lambs Ears & Honey.)

    Eat Drink Blog 11 was organised by an amazing volunteer committee, including Jen from Jenius, Trina from The Gourmet Forager and Simon from The Heart of Food, who spent hundreds of (unpaid) hours putting together an event with an incredible lineup of speakers and sponsors.
